Like any good parent you should never confess to having a favourite child (obviously, I was my parents favourite...) and being a roaster, the same applies to coffee. However, this coffee is simply too good. If I could pick a coffee to drink for the entire year, as filter or espresso, black or white, it would be this one. Why? Because I like natural coffees and this one retains a good amount of body without losing the sweetness. AND, it tastes awesome!
Costa Rica Sonora
Hacienda Sonora is a farm located in the Central Valley of Costa Rica, at the foot of the world renowned Poas Volcano. The farm, sitting at 1200 meters above sea level, comprises of 65 hectares of shaded coffee, 25 hectares of wild forest reserve, and 10 hectares of sugar cane. The farm is run by father and son team Alberto and Diego Guardia and have a goal to have fun, meet great people from different parts of the world, have a positive impact on the environment and on the people that surround their business, all while producing outstanding coffees.
All of the energy consumed by the farm is 100% renewable energy harvested on the farm. This energy supplies power to the coffee mill and provides a portion of free electricity for some of the people who live and work at the farm. The green energy is harvested from a natural water stream with a special turbine, known as a Pelton Wheel.
The Natural is a blend of 50% Black Honey processed coffee and 50% natural processed coffee. Black honey process means that those coffee beans were processed with 100% of the mucilage still intact (fruit of the cherry).
