My first roastery visit is to Seven Miles Coffee Roasters in Manly Vale, who supply a range of blends and single origins around the country. Back in the UK, I have visited several medium sized roasteries. I wasn't expecting the scale of what I experienced. They currently operate a silo system for loading the different blends, which resembles that of a military operation. On this particular day, the schedule included 3500kg of roasting a variety of house blends and single origins.
I was shown around the roastery by head roaster Mike. He was so welcoming and very happy to answer my probing questions. He had a background in food sciences and was originally a food taster for a large produce company in Australia. It was his understanding in flavours which got him into coffee roasting.
Every week they get a new delivery of coffee where Mike takes samples, for flavour, moisture, and consistency.
